Regarded as Italy's finest sparkling wine, Franciacorta wines are produced by the classic method of Champagne, called methode champenoise, in which a second fermentation takes place in the bottle. Notably, the appellation produces only about 5% of the massive volumes produced annually in Champagne, with very little traveling beyond Italy.
Made from 100% estate-grown Chardonnay grapes, the Cavalleri Blanc de Blancs is a blend of the 2019 harvest along with older reserve wines. Fermentation takes place in stainless steel (80%) and large oak barrels (20%), with 20% of the cuvée also undergoing malolactic fermentation. Disgorged between May 2022 and March 2023. Biodynamic.
Fine, elegant mouthfeel, with fresh fruit flavours and an impressively persistent bead. Fresh cut lemon leads on to lychee, orange blossom, pineapple, brioche and crème brulée.
